Eyes are horizontally placed, there's a reason movies/TV/monitors are 16:9, not 9:16. And film 2.35:1.
@Nomad has some excellent pointers. One more to add into the mix - 360 cameras like the GoPro max are incredible for filming wrestling, because you can pan/zoom in a 3D space and get the best angle for every moment. Especially important if you have a lot of vertical>horizontal action like slams.
But if you're looking to buy equipment to film with. A 360 camera can be like three cameras in one. As opposed to a go pro or DSLR. And they're comparitively cheap.
Biggest thing to me is NON SCRIPTED. Way hotter when two alphas fight it out for real! Also I tbink compression shorts and socks are the way to go haha
Good even lighting is your first thing .. although a single spot light that's level with the action, from the side can make for some really nice shadows...
Film from two angles (minimum)in the same frame size format to be able to edit between them on impacts and action moves. You can also use the second angle to cut forward or backwards in time to change the pace of the final edit.
Set both cameras running and clap in front of both cameras view. This will give you some thing to sync up later.
If you make a mistake when filming, just to back a move or hold and use the second angle to cut to the new take.😊
Sometimes it's a good idea to set manual focus with a manual camera app... To stop the auto focus going mad...
You can use a gimbal if you have one to do camera tracking and follow the action.
Never underestimate the power of a go pro stuck to the ceiling above the mat...
And for the record... My preference is non scripted as well... But having multiple.angles to cut from makes for a more interesting final edit and you can tighten up the pace with it, cutting slower sections out etc...

If I have my druthers, this is def my setup.
Also nice if you have a "cameraman" to follow the action, with the other cameras as supplemental.
But so often the idea of filming is after the match is setup. "Hey wanna video it?", "Sure" and you end up with a cell phone propped up.
Script wise, like to have an idea of what we'll be doing but not scripted as such.
